NEW RECIPE: Apricot Delight

(Lunch box friendly, raw, vegan, gluten-free)

I was inspired to make these Apricot Delights after my kids continually beg me for the apricot delight (square things in the packets) on the shelves in the health food section of the supermarket. You know the ones, they’re the type of packaged goods that look like they’re healthy *but they’re actually not*.

With school *almost* back, I thought it the perfect opportunity to attempt a healthy version for the lunch-boxes.

They are dead easy. And delicious. And take all of 5 minutes to prepare. And with only 3 ingredients, lunch box friendly, gluten free and the kids LOVE them. 

I suspect they are going to be on high rotation for some time now in the lunch box or for an after school snack.

INGREDIENTS:

1 cup dried apricots
1 1/2 cups desiccated coconut (plus extra to coat)
1 tbsp Rice Malt Syrup

METHOD:

Place the dried apricots, coconut and rice malt syrup into the food processor and blitz until well incorporated

Place the mixture in between two sheets of baking paper and roll out into a rectangular shape, approximately 1.5cm thick

Cut into 3cm X 4cm pieces and coat with the extra desiccated coconut. ENJOY!

Ps. You can also make these into little apricot balls if you prefer. 

These will store in the fridge in an airtight container for a couple of weeks or in the freezer for up to 3 months (that's if the kids don't get to them before that).
