RECIPE Green Goddess Salad

This green goddess salad is going viral on tik tok, and yes, deservedly so, it's that good.

It's creamy and delicious and packs a decent nutritional punch, with about 14 different veggies / herbs,; your microbiome and skin are gonna love this one.

Here's the recipe, with a few of my tweaks. Enjoy x

Ingredients:

Salad:

- 1 iceberg lettuce
- 1/4 quarter cabbage
- 2 Lebanese cucumbers
- 1 avocado
- handful of pepitas

Dressing:

- 1 handful of spinach
- 1 handful of basil
- juice of 2 lemons
- 1 handful parsley
- 1/3 cup pistachios
- 1/4 cup nutritional yeast
- salt & pepper
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 1/4 cup water

Instructions:

1. Chop all salad items and add to a big bowl
2. Add all dressing ingredients to a high speed blender and blend until smooth. Add a bit more water if too thick and taste with salt & pepper.
3. Add the dressing to the salad and toss well. Add pepitas and toss again.
4. Serve on its own or with your favourite protein
